Buttermilk Biscuits

Makes Approx. 2 Dozen

 

2 c. Self-Rising Flour

4 T. Chilled Butter (cubed)

¼ c. Cream Cheese

¾ - 1 c. Buttermilk

Additional 4 T. Butter (melted)

Preheat over to 500F. Butter a large sheet pan and set aside.

Using your hands or a pastry cutter, knead the chilled butter into the flour until the mixture resembles coarse meal.

Use your hands to mix in the Cream Cheese. 

When thoroughly incorporated, create a well in the middle of the bowl and add the Buttermilk. Mix with a wooden spoon (do not over mix!)

Transfer the dough to a floured work surface and shape into a large square approximately 1.5" thick. Use a biscuit cutter to cut out each biscuit and transfer to the prepaid baking sheet.

Lower the over temperature to 450F and place the full baking sheet into the oven. Bake for 16-18 minutes (top of biscuits will just begin to turn golden). Remove from oven and brush with melted butter. Serve warm!
